Fort Defiance, the renowned neighborhood restaurant and cocktail destination in Red Hook, Brooklyn, is looking for a new general manager to lead us into our next decade of good food, good drinks, and warm hospitality. The ideal candidate:

  • has 2+ years experience in managing both FOH and BOH operations

  • is capable, organized, experienced, a great communicator, and is curious and enthusiastic about food, drink, and management

  • loves the community of Red Hook, Brooklyn

  • bonus points for being aware of the writings of Ari Weinzweig

While owner St. John Frizell is re-opening Gage & Tollner, the legendary chophouse in Downtown Brooklyn, the new general manager will take over all operations at Fort Defiance, a busy, bustling corner restaurant going into its 10th successful year. Many great people have spent years working happily in our community — maybe you will too! RESPONSIBILITIES

Primary responsibilities include but are not limited to:

General ™

  • Oversee and manage all operations (BOH and FOH); report to ownership

  • Make decisions on matters of immediate importance

Human Resources

  • Manage a staff of 25-30 employees

  • Maintain weekly schedule

  • Provide informal feedback, formal evaluations, and corrective action when necessary

  • Provide guidance to employees regarding operational and procedural issues

  • Payroll

Financial ™

  • Continue to increase sales and minimize costs, including food, beverage, supply, utility, and labor costs

  • Review and analyze P&L reports monthly; prepare report and propose action for owner’s review

  • Produce sales projections, monitor progress, and proactively work towards goals

  • Cash handling

Kitchen Management™

  • Manage all levels of kitchen staff (with the help of two excellent chefs)

  • Enforce sanitary practices for food handling, general cleanliness, and maintenance of server, bar, restroom, and dining areas

  • Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances, i.e. ensuring conditions that will produce an A upon DOH inspection

  • Run quarterly kitchen meetings

Front of House

  • Responsible for ensuring consistent high quality of service

  • Maintain professional restaurant image, including restaurant cleanliness, proper uniforms, and appearance standards

  • Oversee our excellent bar program

  • Must have strong knowledge of cocktails, spirits, wine, and beer

  • Management of beverage inventory

  • Run monthly bar and FOH staff meetings

Guest Service ™

  • Ensure superlative guest service in all areas

  • Conduct regular FOH staff trainings

  • Manage special events program and catering

Plant Management

  • Perform maintenance, both routine and emergent

  • Coordinate maintenance by professional contractors

  • Ensure timely maintenance of equipment

  • Ensure a safe working and guest environment to reduce the risk of injury and accidents

  • Ensure security of company assets

Community and the public

  • Knowledge of or willingness to learn about the culture of Red Hook

  • Community involvement and maintaining positive relationships with other businesses in the area

  • Monitoring and responding to all communication to the company inbox

  • Fielding donation requests

  • Social media

QUALIFICATIONS

  • College degree is preferred (a combination of practical experience and education will be considered as an alternative).™

  • Facility with computers, and technology generally (Word/Pages, Excel/Numbers, PowerPoint/Keynote, POS (Breadcrumb preferred), Google Drive Suite, social media platforms)

  • Proficient in all aspects of restaurant operations

  • Experience in kitchen management and food cost/inventory management

  • Food Protection Certificate

  • 2 years restaurant management experience

WORKING CONDITIONS and BENEFITS

Starting Salary: $65,000

  • $300/month health insurance contribution (through our Oscar plan)

  • Paid vacation: 2 weeks/year
